When the salsa aisle disappoints, make your own

I was checking out the salsa selection today at the grocery store when I found myself to be disappointed in the options.

I wasn’t feeling it. Neither mild nor medium had me hooked.

Then, it struck me: Make homemade salsa.

Once home, I threw a few ingredients in the blender:

  • Four cloves of garlic
  • Two 14.5 ounce cans of diced tomatoes
  • One can of green chilies
  • Two jalapeno peppers
  • One medium yellow onion
  • One can of yellow kernel corn with green chilies
  • One tablespoon of sweetened lime juice
  • Leaves from four stems of cilantro
  • Salt to taste

Put the garlic in a food processor and mince. Then add the cans of tomatoes and the can of green chilies and blend.

Next, add the remainder of the ingredients except for the corn and blend again.

Last, but not least, mix in the can of corn by hand.
