CHATTANOOGA, Tennessee — Chattanooga Whiskey has released its latest experimental bourbon, a unique seven-grain high malt bourbon that deploys non-traditional whiskey grains such as malted rice, oats, and triticale.

Bourbon is traditionally crafted from four main grains: corn, rye, wheat, and barley. However, Chattanooga Whiskey said it sought to break away from these conventions, experimenting with a new blend of grains to create a distinctive flavor profile.

Experimental Batch 039: Harvest Bourbon has been aged for more than five years in a combination of three different types of oak barrels. These barrels have been seasoned, charred, and toasted to various degrees, each selected to enhance the unique characteristics of the alternative grain mash bill.

The casks aim to elevate the floral and toasty flavors of the raw and malted rice, the creamy notes of malted oats, and the sweet and spicy nuances of malted triticale. The distillery said the result is a bourbon that offers a fresh and innovative tasting experience, making it a perfect choice for enthusiasts looking to explore new dimensions of flavor.

Batch 039 will be available exclusively at the Chattanooga Whiskey Experimental Distillery starting Friday, Aug. 2, and will retail for $69.99.
